Elote Corn
The BBQ & Mexican side dish everyone keeps asking for!
Elote, meaning "corn cob" in Spanish, is a beloved Mexican street food consisting of grilled corn on the cob slathered in a creamy, tangy sauce, and dusted with chili powder and cheese. When cut off the cob and served in a cup, it is known as esquites.
Ingredients
- 6 ears corn
- 6 Tbs mayonnaise
- 6 Tbs sour cream
- 1/2 cup Cotija cheese
- Chili powder or Tajin to taste
- Cilantro or parsley chopped for garnish
- Mix mayonnaise and sour cream together. Add chili powder or Tajin to taste. I added about a teaspoon of each because I am “heavy handed”.
- Boil corn for 10 minutes. You can also grill it, I did not. Slather with mayonnaise & sour cream mixture, generously sprinkle with Cotija cheese, more chili powder & Tajin and garnish with chopped cilantro or parsley. You can also add a squeeze of lime for a little zing. Serve & enjoy!
