When summer gives you fresh tomatoes and basil, add Brie and make pasta!


This linguine is tossed with juicy tomatoes, fragrant basil and creamy Brie that melts into the warm pasta, creating the most deliciously rich and silky sauce. Simple, fresh and absolutely irresistible!

Ingredients

  • 4 large ripe tomatoes, cut in 1/2 pieces
  • 1 pound Brie cheese, rind removed, torn into pieces
  • 1 cup packed basil leaves, cut into strips
  • 3 garlic cloves, minced
  • 1 cup extra virgin olive oil
  • 1 tsp fine sea salt
  • 1 tsp black pepper
  • 1 1/2 pounds linguine
  • Freshly grated Parmigiano- Reggiano cheese - reserve to serve on top of pasta

Instructions

  1. At least 2 hours before, in a large bowl combine the tomatoes, Brie, basil.
  2. Add the garlic, salt & pepper to the olive oil and mix together. Pour over the tomatoes, Brie & basil. Mix together and leave on the counter for flavors to meld and Brie to soften.
  3. Cook linguine according to the package. Drain and return to pot. Immediately toss with the tomato mixture.
  4. Serve with cracked black pepper and fresh grated Parmigiano-Reggiano cheese.
