Chicken & Hoisin Stir Fry

You are going to want to save this recipe and serve it on repeat! I have been making this recipe for 40 years!

Ingredients

  • 2 pounds boneless skinless chicken breasts, cut into 1 inch cubes
  • 2 green peppers, large dice
  • 1.5 cups salted cashews
  • 1 can sliced water chestnuts
  • 1/2 cup Hoisin sauce
  • 2 Tbs oil (I used Light Olive Oil)
  • Marinade:
  • 2 Tbs soy sauce or Tamari
  • 2 Tbs Hoisin Sauce
  • 2 tsp cornstarch
  • Pinch of baking soda
  • Mix together marinade ingredients, pour over chicken, mix thoroughly and marinate the chicken for a couple of hours in the refrigerator.
  • Heat 2 Tbs oil in a wok. Add the chicken and stir fry for about 5 minutes. Add the green peppers and stir fry for 2-3 minutes more. Add the cashews, water chestnuts and Hoisin sauce, mix together and heat for another 2-3 minutes. Serve over rice.
