Chicken & Hoisin Stir Fry
You are going to want to save this recipe and serve it on repeat! I have been making this recipe for 40 years!
Ingredients
- 2 pounds boneless skinless chicken breasts, cut into 1 inch cubes
- 2 green peppers, large dice
- 1.5 cups salted cashews
- 1 can sliced water chestnuts
- 1/2 cup Hoisin sauce
- 2 Tbs oil (I used Light Olive Oil)
- Marinade:
- 2 Tbs soy sauce or Tamari
- 2 Tbs Hoisin Sauce
- 2 tsp cornstarch
- Pinch of baking soda
- Mix together marinade ingredients, pour over chicken, mix thoroughly and marinate the chicken for a couple of hours in the refrigerator.
- Heat 2 Tbs oil in a wok. Add the chicken and stir fry for about 5 minutes. Add the green peppers and stir fry for 2-3 minutes more. Add the cashews, water chestnuts and Hoisin sauce, mix together and heat for another 2-3 minutes. Serve over rice.
