No-Mayo Mango Cabbage Slaw with Mint, Jalapeño & Lime
Ingredients
1/2 small red cabbage, thinly sliced
1/2 small green cabbage, thinly sliced
2 mangoes, peeled, pitted & thinly sliced (or some stores carry them already peeled, pitted & cut up, which is what I get at Whole Foods. I get about 1 lb.)
1 shallot, thinly sliced
1 jalapeño, seeds & veins removed, thinly sliced
Juice of 1 lime
1 tsp sea salt
1 tsp black pepper
Combine all of the ingredients in a large bowl and mix through well.
