Lisa's Signature Caesar Salad
Bold, Creamy & Loaded with Anchovy Flavor
Ingredients
- 1 can flat anchovies
- 1/2 cup olive oil
- 1 Tbs red wine vinegar
- 1 Tbs lemon juice
- 1 Tbs Grey Poupon Dijon mustard
- 5 dashes Tabasco
- 4 Tbs Worcestershire sauce
- 1 egg yolk (you can substitute 1 Tbs mayonnaise if you want to avoid the raw egg or omit altogether)
- 1-2 garlic cloves minced, I use a garlic press
- 1/2 cup grated Parmesan cheese
- 3 hearts of Romaine lettuce
Instructions
- Add all of the ingredients to a small food processor and blend until smooth. I use the whole can of anchovies because we love anchovies and do not find it fishy. Both the anchovies and the Worcestershire add “unami” to the recipe.
- Chop 3 hearts of romaine lettuce. Toss with dressing. Top with fresh cracked black pepper and croutons It is equally delicious without the croutons. Serve & enjoy.
