Colcannon
Traditional Irish Colcannon with Cabbage and Potatoes
Ingredients
- 2 1/2 pounds gold potatoes
- 1 Tbs salt
- 6 Tbs butter
- 8 cups shredded cabbage
- 1 bunch of scallions,small dice
- 3 garlic cloves
- 3/4 cups whole milk
- Sea salt & pepper to taste
Instructions
- Cut the potatoes into large chunks. I do not peel my potatoes because we like the rustic texture. Place in a large pot, cover with water, add 1 Tbs salt and bring to a boil. Simmer until fork tender, about 20 minutes total cook time. Drain the potatoes.
- In a separate pot, melt the butter, add the cabbage and sauté until softened and slightly browned, about 6-8 minutes. Add the scallions and sauté another minute. Then add the garlic and sauté 30 more seconds. You can mince the garlic, but I always use a garlic press.
- Add the cooked potatoes and milk on top of the sautéed cabbage, mash the potatoes and mix everything together. I lightly mash my potatoes because as I said we like them rustic.
- Add salt & pepper to taste. Enjoy!
- * NOTE - Most recipes call for 3 scallions. I always use the whole bunch which is usually about 6-7, because I am Heavy Handed. And let’s be honest, what are you going to do with the rest before they go bad.
