Chocolate Chip Zucchini Dream Bread

Chocolate Chip Zucchini Dream Breaad
This may be the best tasting zucchini bread I have ever had!
Ingredients
- 3 cups all purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp fine sea salt
- 1 1/2 tsp cinnamon
- 2 cups shredded zucchini with the skin on
- 1/2 cup butter (1 stick) melted
- 1/4 cup grapeseed oil
- 3/4 cup light brown sugar, packed
- 1/4 cup plain Greek yogurt
- 3 eggs
- 2 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 Tbs Turbinado sugar to sprinkle on top before baking
Instructions
- Preheat oven to 350. Generously grease or use non-stick spread 2 loaf pans. This recipe makes 2 loaves.
- In a medium bowl whisk together the flour, granulated sugar, baking soda, baking powder, salt and cinnamon.
- In a large bowl, combine the butter, oil, brown sugar, yogurt, eggs and vanilla.
- Add the zucchini to the bowl of dry ingredients and stir together.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Add the chocolate chips and gently combine, not overmixing.
- Pour the batter evenly into the two loaf pans. Sprinkle the Turbinado sugar on top of each.
- Bake the bread for 60 minutes at 350. It is done when a toothpick comes out clean.
- Remove from oven and let cool for 15 minutes in the pan. Then remove from pans and let cool completely on a rack.
