Cheesy Italian Sausage-Stuffed Zucchini Boats
Something delicious is sailing your way…Italian sausage zucchini boats loaded with savory flavor and plenty of cheesy goodness!
Ingredients
- 4 medium zucchini, about 8" each
- 2 pounds Italian sausage - I like to do half sweet and half hot sausages
- 1 quart Lisa's Famous Marinara
- 1 1/2 cups shredded mozzarella cheese
- 1 red pepper, small dice
- Italian seasoning
- Parmesan cheese
Instructions
- Preheat the oven to 400.
- Cut the zucchini in half lengthwise, scoop out the soft middle with the seeds.
- Remove the sausage from the casings and brown in a large pot. I like to drain the sausage on a plate with paper towels and drain the excess liquid from the pot.
- Return the sausage to the pot and add the marinara sauce. Combine and lightly heat together 3-5 minutes.
- Spoon the mixture into the zucchini boats.
- Top top with shredded mozzarella, then diced red pepper, sprinkle with Parmesan cheese and Italian seasoning.
- Bake in oven for about 30 minutes until cheese is melted and slightly golden.
- Remove from oven and let the boats rest for 5 minutes.
