Cheesy Italian Sausage-Stuffed Zucchini Boats

Ingredients

  • 4 medium zucchini, about 8" each
  • 2 pounds Italian sausage - I like to do half sweet and half hot sausages
  • 1 quart Lisa's Famous Marinara
  • 1 1/2 cups shredded mozzarella cheese
  • 1 red pepper, small dice
  • Italian seasoning
  • Parmesan cheese

Instructions

  1. Preheat the oven to 400.
  2. Cut the zucchini in half lengthwise, scoop out the soft middle with the seeds.
  3. Remove the sausage from the casings and brown in a large pot. I like to drain the sausage on a plate with paper towels and drain the excess liquid from the pot.
  4. Return the sausage to the pot and add the marinara sauce. Combine and lightly heat together 3-5 minutes.
  5. Spoon the mixture into the zucchini boats.
  6. Top top with shredded mozzarella, then diced red pepper, sprinkle with Parmesan cheese and Italian seasoning.
  7. Bake in oven for about 30 minutes until cheese is melted and slightly golden.
  8. Remove from oven and let the boats rest for 5 minutes.
